German Potato Salad

Directions
Ingredients
  1. Place potatoes in a large pot and add water to cover by at least 1 to 2 inches and bring to a boil. Cook until potatoes are fork tender, about 10 minutes.Drain and set aside to cool.
  2. While potatoes are cooking (or before) place bacon in large skillet . Fry until browned and crisp. Transfer to paper towel lined plate and crumble when cool enough to handle. Leave bacon grease in skillet
  3. Cook onion in bacon grease until soft and translucent. Add vinegar, sugar, water, salt, and pepper to pan and bring to a boil.
  4. Once boiling, add potatoes, and 1/2 of the crumbled bacon. Cook until heated through and sauce thickens.
  5. Trabfer warm potato salad to a serving dish and sprinkle remaing bacon over top. Garnish with parsley. Serve immediately
