German Potato Salad

- Place potatoes in a large pot and add water to cover by at least 1 to 2 inches and bring to a boil. Cook until potatoes are fork tender, about 10 minutes.Drain and set aside to cool.
- While potatoes are cooking (or before) place bacon in large skillet . Fry until browned and crisp. Transfer to paper towel lined plate and crumble when cool enough to handle. Leave bacon grease in skillet
- Cook onion in bacon grease until soft and translucent. Add vinegar, sugar, water, salt, and pepper to pan and bring to a boil.
- Once boiling, add potatoes, and 1/2 of the crumbled bacon. Cook until heated through and sauce thickens.
- Trabfer warm potato salad to a serving dish and sprinkle remaing bacon over top. Garnish with parsley. Serve immediately
- 3 cups diced peeled potatoes (about 3-4 medium)
- 4 slices Bacon
- 1 small onion diced
- 1/4 cup white vinegar
- 2 T water
- 2 T white sugar
- 1 t salt
- 1/8 t pepper
- 1 T chopped fresh parsley
